Greek Salad With Lemon Viniagrette

- *****Vinaigrette***** shopping list
- 1/4 cup extra virgin olive oil shopping list
- 3 Tablespoons freshly squeezed lemon juice shopping list
- 1 Tablespoon Greek Seasoning blend->(make sure to use a herb based seasoning, not a spice based with dehydrated veg.) or make one like this: Greek Seasoning shopping list
- 1 garlic clove, minced shopping list
- 1 tsp freshly grated lemon zest (optional) shopping list
- Sea salt-to taste (some seasoning blends have salt added already) shopping list
- A few turns of the pepper grinder. shopping list
- *******Salad******* shopping list
- 1 cup diced and seeded tomato or whole grape tomatoes shopping list
- 1 cup diced seeded cucumber shopping list
- 1 cup chopped red pepper shopping list
- 3/4 cup thinly sliced red onion shopping list
- 1 cup diced or crumbled feta cheese shopping list
- *Optional: -1/2 cup of chopped, pitted, kalmata olives shopping list
- -2 cups of chopped Romaine Lettuce shopping list
- **For a Hearty salad add 1-1/2 cups of cooked Farro grain (wheat berries) quinoa, barley or rice. etc.. instead of the Lettuce. shopping list
How to make it
- Whisk together olive oil, lemon juice, Greek seasoning and garlic in a small bowl. I like to make the dressing in advance and let the flavours meld for at least an hour.
- In a large bowl add in diced tomatoes, cucumber, red pepper, red onion and Feta. (and olives if using)
- Toss enough dressing to just coat the veggies.
- (There is enough dressing to coat the addition of Romaine lettuce or pasta if you choose.)
- Adjust seasonings to suite your tastes, and enjoy!
- * Fresh herbs are a nice addition, such as mint, coriander, oregano or basil etc...add that when serving if desired.
- *If using Farro or other grains, it can last in the fridge for 3 days once mixed together. The Farro can soak up a lot of dressing, so I like to keep some extra on hand.
