Pork With Blueberry Sauce

    Recipe by Eucalombian: Pork With Blueberry Sauce
    A deeply savory dish!
    Onions play up nicely in the sauce.
    No such thing as a small red onion in my neck of the woods. So I doubled the sauce batch, especially that we cant get just a half pint of blueberries either. This makes plenty of sauce even without doubling it.
    Went a little heavy on the pepper but it was all good.
    Run a slice of rye bread under the goodies on my second helping.
    Flavors are very bold. If you're a wine drinker this will need a bold red wine.
    Very nice recipe and quick to make!

    Buy a pork loin so you can trim the fat and cut the chops to your liking. Mine were about 1/2" thick and 10 minutes (the time it took the double batch sauce to thicken) in the oven brought the temp up to 160. I was shooting for 145. Going to try 1-inchers next time.

    I made this the other night. It was VERY good and the sauce thickened up nicely! Using a loin to cut myself would have been a great idea but what I had was 5, 1/2 inch thin boneless chops. Wish I wouldn't have gone so heavy handed on the cilantro, it's hiding most of my blueberry sauce!

    I made this last night. What a great and easy dish. I had a 2.5LB sirloin tip roast that I cut in a little bigger than an inch. I seared them in a CI skillet on high with bacon grease. Then decided to finish them on the stove. Kept them in the warmer while I made the onions and blueberry sauce. I also somehow walked out of the store with a bag of spinach instead of fresh parsley. Dont ask me how I did that, but am glad I did.. I thought it was an excellent flavor addition. I LOVED this. Ate 3 steaks (are pork steaks called chops?) Only 2 little end pieces left : ( Next time Im doubling this and there will be a next time. Added a pic. This was the first time using blueberries in anything. Great recipe, Eucalombian

    Good thing you didn't accidentally pick up cilantro instead of parsley or that would have been a mistake, yikes! :) Bet the spinach was great with this though! Nice looking chops (or pork steaks ;)

    Thanks,guys. ml2c. Yeh a few months ago we tore the place down and built a new one. It consumed most of my after work hours. Thats why I have been so scarce. Now that Im moved in things should start getting back to normal. I hope anyway. Still tons of work to do, but now its at my leisure with no deal lines but my own. Speaking of cilantro, when I was at the store I saw a bundle of it and almost got some. But I chickened out. I didnt want to waste a dish incase I still hate it. But the spinach was really good
