Posole Verde

    I cut this recipe down to about 4 servings. I used a pork loin, and since it was a different cut with no bone I chose to only simmer about 1 hr. I then removed from pot and chopped into small pieces and returned to pot with verde salsa for the 2 hrs. For the poblanos I used a dried Guallijo chile since I didn't have them and to make it less spicy. I reconstituted the chile in boiling water for about 20 minutes, then chopped very fine. Worked great! I topped the soup with chopped onion and avocado. Wish I had the radishes because they are delicious in posole. Very good soup!!

    Well, I've never had posole and I have also never had radishes in soup! It sounds interesting and looks great! Sometimes I have to get out my calculator when cutting recipes down. I have some things memorized by now. :-)
