Potato-Carrot Pancakes

    I used 2 good sized red potatoes (unpeeled, I like the stuff) and 1 large carrot. These are VERY delicious. I only used half an egg since I don't feel I had a lb of potatoes, but I did use the full Tbs. of flour because was worried about these holding together. DONT worry though, just do as the recipe says and they stay together very well when ready to flip, which surprised me for some reason. Mine were seasoned perfectly although there was really no way of telling until they are cooked. I would say I did about a right under a 1/2 tsp salt and 1/4 tsp pepper (I love pepper ;). Served with a dipping sauce I made up quick: Greek yogurt, lemon juice, garlic powder, cayenne pepper, S&P. Very good combo too!
