    The Green Onion Champ I made last night is super creamy so I was thinking the addition of eggs would make this very much like pancake batter - which it did. These were very tasty. My first two broke and, as I cut the recipe in half, I think I would have gotten eight nice sized pancakes if they had turned out right. My two old doggies loved the little bites I gave them so the broken ones will be their dinner. :) A bit more on the recipe.

    They look great, Frankie! Funny I was going to suggest doing something like that yesterday with your leftovers. My Grandmother used to make something similar and she used a bit of flour to bind them together. Once again great pics as always!

    Oh, I forgot to mention, I don't know if you knew that onions and garlic are toxic to dogs. I am not sure if you knew that or not? Chocolate, grapes, peaches, avocados are a few more things that come to my mind at the moment. I just don't want them to get upset tummies and get sick.

    Thank you, Bakerme. I have tried to make potato pancakes before using leftover mashed potatoes and didn't have much luck with them but they had flour in them. These had eggs and I think it made the difference for me.

    Mommyluvs2cook, potato pancakes are meant to be eaten as a side dish, not like regular breakfast pancakes :) You could make them to go with your leftover BBQ meat - yum!

    I thought these were really good too and I tried one cold as well. :) I liked that these didn't have flour in them. The mix turned out just like pancake batter and made it easy to use.
