Potato Salad Southern Style

    Recipe by Efitobx: Potato Salad Southern Style
    A good potato salad. Used salad dressing instead of mayonnaise. My preference. Bought a small jar of baby gherkins because I'm cheap. Used the juice and chopped up the gherkins to add into the salad. And as in my last review, used cilantro instead of parsley. Used this as a side dish to: Honey Herb Roasted Chicken

    That looks a lot like the way I make my potato salad - minus all the celery stuff. I love mustard in my potato salad and always put sweet gherkin juice in it as well. But I've never mashed up egg yolks in it! Interesting idea.

    Actually used the whole egg, white and yolk. Couldn't see throwing it away. How often do you come upon a recipe calling for hard boiled egg whites.

    Yeah, I would want to waste it either, pso. This looks good to me. I may try it sometime although I love my own salad although I don't have a recipe. I'd probably omit the celery. I don't care for it in salads.

    This is really close to mine too. I love hard cooked eggs in potato salad, but why only the yolks in this one?? The really only difference I see is that I add bacon ;)
