Pumpkin Cheesecake - Diabetic Friendly

    Good flavor. Tastes like pumpkin pie. There's not that real creamy cheesy flavor that is synonymous with cheesecake. It is creamy but tastes like pumpkin pie.
    Used an 8" springform pan (don't know where my 9-incher got off to). Cake was done in the minimum time spec'ed. There wasn't that little wiggle in the center that cheesecakes are supposed to have. The whole cake jiggled. My assumption is it was over-done.
    Didn't save any crumbles for the top of the cake so I just shut the oven off and set the door ajar with the cake still in the Bain Marie. Cake top cracked anyhow.
    Making this again I'd start checking sooner that the minimum bake time for that little wiggle in the middle.

There's no hiding cracks when you serve it to company :p Ever since I switched to the below recipe, which uses no flour, my cheesecakes come out perfectly *every* time!     Oh, another thing I've started doing is putting the springform pan on a baking sheet. It not only makes putting the cheesecake in and out of the oven easier, but seems to act as a bit of a buffer for the delicate cheesecake batter so it doesn't overbake.
