    Nice veggie dish. Outside of the squash rounds were still a little tough but not undone. Could remedy that by peeling the squash or crocking a little longer.
    Lost 40% to liquid as it baked down. Good savory flavor. Mother loves summer squash but thought the outside edge was a little stringy.
    Picked this recipe because I still had a cup of homemade ricotta left over, and made to order a half cup of homemade bread crumbs.
