Roasted Sweet Potatoes and Beets

    LOVED this! If you stir these during the cooking or at the end it will turn your sweet potatoes red! My husband HATES beets (or at least he thinks so) so I was worried he wouldn't eat the sweets since they had "beet juice' all over them but he did and I was happy to have my beets! So good!

    Hey ML2C. Did you use the white sweet potatoes? Hard to tell with all the red. I have come to the conclusion that the redish/orange sweet potatoes just arent for me. I do like the white ones as long as they're not further sweetend. Redish are too mushy and sweet. I would like to try this with whites. I like beats (but have only had them out of a can) and this sounds good. Thanks for the heads up

    They are the orange one's, I don't think they grow or sell "white" sweet potatoes around here. I've never seen them before and your post a while back on them was the first time I've ever even heard about them! I do think they would work fine in this recipe as by what you described I'm guessing they are more potato-ey and less sweet, more starchy?

    I had some of the reddish ones over the holidays. They were done in the oven. They were mushy and really sweet. I dont think there was anything added to them. And yes, ML2C the white ones are much closer to a regular potato with much less sweet to them. But the skin is much better on the reddish ones. Seemed thinker

    Also added a couple of Russets and made a tri-color of flavor.
    Baked for an hour only because of the reduced temp of baking Russets normally. Recipe was fine with it.
