    Roasted Tomatillo Chicken Chili
    I've made this recipes a few times now for whatever reason had never added it to IMI before. So here it is....:)
    I LOVE THIS RECIPE! Until only a few years ago I had never even heard of a Chili using Chicken before and I certainly had never heard of tomatillos!
    Tomatillos are showing up more often now in our local grocery stores but I was lucky enough to score a very nice little box of them at my local Farmer's Market on Sat. I think they're so neat and I really should look into more things to do with them.
    I don't remember the Chili being so hot the other times I've made it but last night it had a pretty good heat from the jalopenos. Could be my imagination but jalopeno peppers seem to come a lot larger now than they used to? I used two that were about 4" long and almost an inch in diameter. We enjoyed it, but my Mom wouldn't have. :)
    The kitchen smells wonderful as the tomatillos, onion, peppers and garlic are cooking down in the stove. I didn't use the entire 32 oz. of chicken broth as I prefer my chili a little thicker. I probably used 24 oz.
    Instead of deli roasted chicken I used up a good amount of leftover cooked chicken I had up in my freezer, and I only had about a cup and a half of romano beans on hand but I felt it was a pretty good ratio. The cilantro is lovely in this and I used medium cheddar as opposed to Monterey Jack. Neither hubby nor I care much for sour cream so I didn't bother with that.
    Leftovers for lunch. NOM!

    Another thing I haven't tried - tomatillos. And I really don't have an excuse as they are readily available here. That looks like a good bowl of food! I like my chili thick, too.

    It looks and sounds really good Janet! It would probably be just as good with a can of green chilies instead of jalapenos, probably less hot ;)
    I'll have to be on the look out for tomatillos, I don't think I've ever really looked for them.

    I'm with Janet, the tomatillos, peppers, onions and garlic DO smell pretty crazy good roasting up in the oven! I also baked up my own chicken, used chicken breast that I seasoned up with garlic powder S&P. My jalapenos were probably medium heat, but here, they do fluctuate from mild to super hot, so you never know :) I normally would have cooked up some dried beans for this, but I didn't have time so I used the canned. My ONLY complaint which I have to bring my rating down to four for is that there is a LOT of onions. With the roasted onions and then the sauteed onions, I found my family picking them out, and with me an onion lover, I was even scooping my spoon around them, it was a lot! Great flavor though, delicious :)
