Rosemary Focaccia

    Rosemary Focaccia/saved
Made two very nice 9-inch rounds. Shaped them with high sides so they could be cut in half for cold cut sandwiches. Instead of letting the dough spread during the second rise, I encircled the dough rounds with parchment paper. Added picture to recipe.

I did forget to rate the recipe. I would give it 4 stars. I'm thinking it needs more herbs but maybe that's my fault for not using fresh rosemary. There is an unclarity in the destructions over a quarter cup simmering oil for the onions; whether to use the oil in the dough or strain the oil out of the onions.
I wound up using all of it; oiling the baking pan and pasting it on top of the dough for the second rise.
Loaves have good flavor but I can't help thinking there could be more. Wish I had a couple extra bucks in my pocket for some cold cuts to make nice sandwiches. But going to use these for sopping some baked beans.

If you want to make the focaccia with high sides so it can be sliced in half to make sandwiches; here's how:
Make 3 strips of parchment paper 1 1/2 - 2 inches wide. Cut one strip in half and staple each half strip to a full strip on both ends. This will make two 22" circumference circles 2 inches wide. Encompass each dough round with the paper for the second rising. This will direct the dough to spread up instead of out. You can leave the paper on while baking too.

Made this before but the recipe review seems to have disappeared, just as with several other recipes I've reviewed by this author. But the pic is still there.
