    This was pretty good but it needed "something." I kept thinking Worcestershire sauce but then I guess that wouldn't be scampi. Needed salt and pepper and I noticed it didn't have any but I made the recipe exactly to spec. I don't recall ever marinating chicken in lemon juice but I do recall having a faulty memory so, who knows. It definitely did have a lemony flavor to it.
    I don't think four minutes per side is enough for chicken but I suppose it depends on the size of your thighs. Well, the chickens' thighs, that is.

    I marinate in lemon or lime juice all the time, so that's okay with me...but, doesn't it seem like that recipe is awfully skimpy on the other ingredients? Scampi is garlicy! :) I'd have at least tripled most of them, I think.... and salt and pepper, of course.

    Yeah, Keni, and she calls the "glaze" (which I wouldn't call it) "herby" - which I wouldn't call it either. I suppose parsley may be technically an herb, but it doesn't really add much flavor. It definitely could use more paprika and I used two cloves of garlic. So, something is missing.

    I adopt senior dogs, Keni. Sammy (my third senior) passed away on August 21. I got a "new" 11 year old three legged Dachshund (Buster) about two weeks before Sammy left me. Buster's owner died in February. The seniors don't last long, usually, although I had Sammy for two years and eight months. I think that was the longest I had one. Its a rewarding although heartbreaking at times "hobby." I should give it up but I just can't. The ones that have left me before help me with the new ones. :)

    I havent had chicken in a couple of weeks, which is RARE for me. But that pic sure looks like it would be good. It does seem like its lacking in the amounts of seasoning, tho.
