    Spinach Cheese Ball

    SO good! I used fresh spinach and fresh cooked bacon so I gave a full review.

    This was easy and quick and tasted great with crackers....football food!!

    My pleasure ma'am! It really worked out great. The spinach was nicely wilted and soaked up the bacon flavor... and it didn't make the whole thing to soft, either.

    I did forget to mention, we let this rest for a few hours, then rolled it in the bacon... but, it was just as good as the bacon softened.

    I have probably mentioned this before, but this is by far my #1 requested recipe. Everyone just loves it because it's so simple and so good. I knew Keni would make this even better than I had ever thought of. I really like the idea of wilting the spinach in the drained pan. That should really help the bacon/smoke flavor. Regular bacon has always been on my list to try in this but it always seems like I'm in a rush when I make this, so I just use the bits in a bag.

    Thanks so much Duboo:) No problem on you being my friend too:) You have some very good recipes and I like your approach to cooking by adjusting or tweaking things as you go along. That is the way I always cook things unless, I am going strictly by the book of course!
    I know I would use regular bacon in this, as I always have some precooked and done up in my freeze ready to easily pop of to use at anytime. It is well worth the initial effort and time for me. I still think this Cheese Ball would be great for any occasion:)

    Oh wow Keni, that looks wonderful!! I have never made a cheese ball! I would make one like Keni made it and then make another and sub out the bacon for some kind of chopped nuts, for the abnormal amount of vegetarians we have in our families :) Nice recipe Duboo!
