I don't know why but shrimp has been buy one, get one free where I shop lately - per bag, not per shrimp. :-P So, I have been taking advantage of it and found on Sunday night I had eight pounds of 16/20 shrimp crammed into my little freezer. Time to cook some of that stuff up! I used this as a dinner salad, not as a sandwich. I really liked the hard boiled egg with the shrimp. I found a really gorgeous tomato in the store today! It was organic and I am scared to look at my receipt to find out how much I paid but it was really delicious! I came home at lunch time and whipped this up in 20 minutes so it had time to chill for dinner.
Its finally getting light enough where I have some natural light around dinner time! Yayyyy! :)

I said I wasn't going to look at any more yummy fish recipes from you and Mommyluvs2cook, but saw 'shrimp' in the title and got sucked in. Again! Glad you got more than one shrimp in the buy one, get one free sale because that salad looks delicious in your photo! The spinach and tomatoes are nice touches.
