    Only tasted a small bite as this is going in a Keni recipe come Sunday. It tastes pretty good but it's been forever since I've had salmon.
    I saw that the crock had to be sprayed to keep the fish from sticking so I got the idea to wrap the fillet in bacon to get the same result, plus make the fillet auto-basting.

    I thought it was intuitively obvious to pour the smoke over the top of the fillet then turn the heat on.
