Recipe by Luisas catering: Soft White Buttermilk Bread

Interesting ingredients. Half a cup of butter and two packets of yeast.
I assume the extra pack of yeast is because of all the butter.
Came out nicely browned and hollow when tapped on the bottom.
Took a slice out of the middle, when cooled, to check the work. Loaf has nice flavor albeit a little on the gummy chewy side.
When checked a couple more hours later, bagged, the loaf had squatted. Never had a loaf do that before.
Recipe says it makes two loaves. I made one in a 9x5 pan. Author must have been making small loaves since a regular loaf takes 3+ cups flour and this one called out 4 cups.
Rated it 3 stars because the loaf squatted.

I was going to try this last weekend. Even bought the buttermilk. Then I got sidetracked and didn't do it. I was going to cut the recipe in half for one loaf. Now I want to try it for sure after your review. I'll plan for this weekend. I also noticed her loaves look a little short in the second photo.

Forgot to mention: Luisascatering's sliced loaf picture had a coarser grain than I like. Probably due to double the leavening than in a regular recipe.
So I kneaded the dough a few times after the first rising to expose the yeast to new flour areas of the dough and bust up any large holes that are trying to form so the loaf will have a tighter grain. Rest the dough for 15 minutes, covered, before shaping for the pan.
