    Sourdough Whole Wheat Pancakes
My starter is smelling nice and sour now so I really got a nice sour flavor with these. Then a bit of sweet! I think from the whole wheat flour combined with the sugar? Not sure but it was good! I quartered this recipe. Scrambled up the leftover 1/2 of egg. More on the recipe.

I take it you used your starter instead of the recipe starter.
My last attempt at sourdough pancakes resulted in very chewy pancakes. I assumed it was because of all the gluten built up in my starter. How was yours?

Well, pso, I know you will be disappointed in me so don't unfriend me but I've never made homemade pancakes before. Just the Bisquick kind which, to me, are kinda rubbery, heavy and super filling. One of the reasons I don't ever make pancakes. These weren't like those ones. They were thinner and not very chewy at all. When they soaked up all the syrup and butter they fell apart. They really have a very good flavor to them.
And - yes - I used my own starter. The starter in that recipe looks weird to me.

The stater in that recipe is the beginnings of putting a starter together. It still has to go through the yeast collection stage to be a bonafide starter. You could use it right away after it forms bubbles but there would be no sourdough taste.
Well I'll have to try pancakes again to see if it's something I did.
