    Southern Fried Squash Patties Dated 1942 by chefmeow

    I cut the squash in rounds instead of lengthwise as the recipe instructs, and I also shook the squash in a plastic bag to coat with the cornmeal instead of dredging.

    At first I thought I should have dipped the squash in egg or in some sort of liquid so that the cornmeal would adhere better, but as it fried it developed a nice crunchy exterior.
    I'll make these again. (And to keep with the Southern title, I enjoyed sweet iced tea with these.)
