    Nicely flavored gratin. It's a shame I didn't get the sweet potatoes done enough (trying not to overcook them per the directions).
    The oven bake time didn't improve the tenderness any.
    Doing this again, I would simmer the potatoes until fork tender. It is a dish worth a second crack.
    Used a triple cheese shred which included the white cheddar. It's what I had on hand.
    Going to run this through the microwave to try to finish cooking the sweets.

    That is an interesting way to serve up sweet potatoes! I don't know a darn thing about how long it takes to cook sweet potatoes. Do you think making it ahead would help make them softer? Or does that matter with sweet potatoes?

    Nice savory sweet potato dish...a bit different than we we usually see in a sweet potato recipe! It does seems like they take forever to cook..I baked some whole in foil last night and we just served with a little butter..Looks delish Points!

    I think sweet potatoes take a little less time than russets. I did have a couple of large ones in the boil with smaller ones. Make ahead does not make a potato softer. Not my experience.
    I thought that the extra time baking in the oven would complete making the sweets fork tender but such was not the case.
