Spicy Zucchini Rice and Sausage Casserole with a Cheesy Corn Sauce

    I was curious if this would be too rich, like after 8 bites I would be tired. No way! It was so good I went in the kitchen and starting eating small bites out of the casserole dish! I followed the recipe exactly EXCEPT I used Italian sausage in place of the breakfast sausage which worked great! I bet the breakfast sausage was good though. I also halved the recipe (which now after eating it wish I'd had made the whole batch for leftovers) and it worked great with just an adjustment to cooking time. I'm telling you this is full of creamy goodness flavor!

I would lick the bottom of one and stick it on my finger like a pretend ring. It would be my Underdog Super Energy Pill ring. Then I would eat the pill and be STRONG : ) Underdog is before your time, but thats what popped in mind the second I saw your photo. Thanks : )

    I have not idea what candy your talking about Mr. P but you sure did have fun with it as a kid :) Dt, I think ground pork would work great and I wouldn't even bother with seasoning. The cheese sauce has lots of flavor. Chops are a great idea too!

    My sister and I loved that cartoon. It was on with George of the Jungle. I have the George of the Jungle DVD's so I have all the Super Chicken episodes, too.

    Hey Frankieanne - To be honest I never watched those and I don't know why. We did not have cable because of living on a farm, and we only got a couple of stations. So maybe these were on a network that we didn't have or else something else was on at the same time that I wanted to see... I guess because I grew up without a lot of TV, that's why I really don't watch or even care to watch much TV now. But I do seem to do a fairly good job of spending time on the computer, on sites like these... ;)

Luckily, one of them showed cartoons after school so I am very versed in "cartoon." Love the Flintstones! I always loved the friendship between Wilma and Betty. :)
    Yes, Mr. P, Super Chicken drank his super sauce and he did wear a mask, too!
