Strawberry Mousse - Diabetic

Recipe by Spinach1948: Strawberry Mousse Diabetic/saved
Sweet, thick and airy, if that's not an oxymoron. Used Stevia In The Raw as the sugar substitute. Hardest part of the recipe was hulling the strawberries. Used one of those thick sippy-cup straws as the huller. Push it up through the bottom and the green pops off with the least amount of waste. Sent the pureed strawberries through a food mill with a fine screen to get rid of the seeds.
Finally a mousse I get to consume.

That looks so good, Points! I have this one saved, but haven't tried it yet. Good tips about hulling and de-seeding (is that a word?) the berries!

That looks delicious, pso! I'm making up a no sugar strawberry dessert for my dad this weekend. I hope it turns out as good as yours did for you! I'll post my results after he tries it. :)
