How to make it

  • In a food processor or blender, combine strawberries and sugar or substitute; cover and process until smooth. Strain and discard seeds. Return strawberry mixture to the food processor. Add pudding mix; cover and process until smooth. Transfer to a large bowl; fold in whipped topping. Spoon evenly into 8 desert dishes. Refrigerate until serving. Yield: 8 servings

  • Nutritional Values: 1 serving ( ½ cup ) Calories per serving: 145, Fat: 3g, Cholesterol: 0, Sodium: 148mg, Carbohydrate: 27g, Fiber: 2g, Protein: Trace
  • Diabetic Exchanges: 1 starch, 1 fruit, ½ fat.
  • NOTE: I modified the original recipe to My Diabetic Version.
