    I had to change a few things with this. I used a small pork loin instead of a rump roast, and I didn't have the Smokehouse Maple seasoning so I used my own rub (approx. 1-T. each of onion, garlic, mustard powder, coriander, paprika, cumin, oregano, brown sugar, pepper and a little sea salt). The big difference there is I am missing the "Smoke" flavour.

    I wanted the maple flavor, so I coated the loin in real maple syrup instead of honey. I added a few Tablespoons of my seasoning to a plate with the rosemary and thyme and rolled the meat in it, making a nice crust. I placed the veggies in the bottom of the slow cooker and used only a cup of chicken stock, barely halfway up the potatoes ( I didn't want mashed potatoes!)
    Because I had a small pork loin it took half the cooking time. I removed all the jus from the slow cooker and made a quick gravy, thickening it with cornstarch. There was no need to add extra seasonings at the end either, as I usually do with a slow cooker recipe. The rosemary and thyme complimented all the flavors in this really well, and the apple melted into the sauce and added a lovely floral note to it, very nice well rounded flavours!

    The only suggestion I have is to use less liquid, or pull the potatoes and carrots out earlier so the meat can finish cooking and soak up the jus.

    I'd love to get my hands on that Smokehouse Maple seasoning and give it another go!

    Thanks Marie :) I googled the seasoning and McCormick makes it. I'm going to look for it next time I'm at the store.

    Wow, that looks so good! I should try that one. I happen to have the Smokehouse Maple seasoning. I love maple on meat and have sprinkled it on a steak before grilling. Its good stuff! Love the picture!

    Oooooo that seasoning would be good on salmon wouldn't it Marie! Now you have me wanting to look for it too. :)

    Thanks everyone :) I just realized I took a picture without the gravy on! It is really good with just the jus or the gravy. I tossed the leftovers together with the gravy and the meat fell apart because it's so tender, now it looks like a stew. I can see if you used a pork rump roast you could easily have pulled pork out of the deal! ;)
