Sweet & Spicy Bacon Chicken

    These were great! We had a late supper and we were really hungry so I forgot to take a picture, but they were very nice looking :)
    I had thick cut, hickory smoked bacon. I wasn't sure if it would work for wrapping around the chicken, but it worked great! I cut up some chicken breasts into in long strips and used a whole strip of bacon on each piece. I rolled them in dark brown sugar, and it gave it a nice sweet, smoky, bbq flavor. To crisp up the thicker bacon, I cooked it at 425f, for 20-25 minutes, flipping them over halfway. This would work great out on the grill too.
    I made a honey mustard sauce, but it was not even needed, it tasted great plain and was plenty juicy and flavorful.

    I cut the chicken breasts myself, so they were much bigger then the chicken tenders you buy already cut at the store. Smaller pieces would make a great appy. I also think a bbq type sauce would go better with this than a honey mustard, but like I said they really didn't need a dip. :)

    Made this last night, unfortunately it didn't turn out so well. I used turkey bacon, have never had it before, so that most likely the problem. It was basically swimming in liquid on the jelly roll pan when done. I guess not all turkey bacon is the same? But we did enjoy the chicken, I had marinated in soured milk with hot sauce before wrapping with bacon and spices. Will try again when I have some REAL bacon.. LOL

    I'm not sure of why the turkey bacon would give off so much liquid. Hhhmm I have had problems in some chicken recipes with liquid before. Think it's the chicken that did it? In Keni's Unstuffed Chicken Florentine recipe sometimes it's liquidy and sometimes it's not... just weird!

I don't think if was the chicken Mommy, as I do the same marinade when I do breaded chicken strips and I never have any liquid on the pan! ?? Note: the chicken was good, but the turkey bacon was weird!!??!! Probably the brand of turkey bacon, will have to look for another one!

    I did have a little bit of liquid and bacon fat drip from the chicken onto the pan. It wasn't swimming though! The liquid started to smoke a little bit because the brown sugar was started to caramelize, but by that point it was done.
    I wonder if it's the chicken? Some company's plump the chicken with salted water. Maybe try it next time without the marinade Lobster, I found the liquid stayed inside the chicken with the bacon insulating it!

The only problem I had was the brown sugar melted and began to burn in the baking pan..I used chicken tenders, and maybe cooked just a bit longer than I should have:) I had a heck of a time cleaning my favorite pan! Next time I'll watch more closely! 400F is a pretty high heat to be cooking for 35 or so minutes as the recipe calls for..I baked mine maybe 20 minutes.Anyway, added my ugly picture to the recipe:-D I was in a hurry cause my pan was burning up LOL So didn't take the time to take a pretty pic:)

    Oh sure, no problem! Next time I make this, I might lower the heat to 375F and try sprinkling the brown sugar on after the chicken cooks for a few minutes...!
