    It sounds to me maybe your stove heat was a little high?
    Also if you're using butter the impurities in the butter will burn, if slow frying use clarified butter, basically melting the butter in a pan and removing the impurities which is milk solids and other things in the butter that will burn, clarified butter is pure liquid This problem also exists in Olive Oil, but you can by a. I use Pam regular cooking spray, but there again if the pan is too hot it will blacken.

    The smoke point of oil varies with its quality. High quality extra virgin olive oils (with low free fatty acids) have a high smoke point. They are an excellent choice, but an expensive one. Mass produced, low quality olive oils have a much lower smoke point. Please note that we are talking about virgin oils, here, not chemically refined oils.

    I made this tonight using turkey bacon, so flavorful! The only problem I had was the brown sugar melted and burned a bit in the pan..next time I'll watch more closely! More in Sweet Amp Spicy Bacon Chicken Thank you Twill for sharing this recipe:)

    These were great! I had thick cut hickory smoked bacon, and it worked great wrapped around the chicken. I cut chicken breasts in long strips and used a whole strip of bacon on each piece. I rolled them in dark brown sugar which it gave it a nice sweet, smoky, bbq flavor. To crisp up the thicker bacon, I cooked it at 425f, for 20-25 minutes, flipping them over halfway. The chicken was juicy and tender as well. Delish!
