    Sweet Potato And Spinach Hash With Eggs

    Great lunch! I veered from the recipe in that I used grated sweet potatoes to help them cook faster..and used leftover bacon drippings to saute the veggies, but then added finely chopped brown sugar ham.

    I did not do very well at getting the "nest" from the skillet to the serving plate - so had some re-constructing work to do before I could take the photo!

Neither had I. It worked great, and it's a plus to avoid having to wash another skillet! :) Remember the Hash It Out Hash Brown recipe with the fried egg? Why not use this technique for it? Save a little fat and calories that way. :) (Or maybe you don't care about fat and calories...) :O

I honestly thought of the cooking it in another pan and throwing it on top just so I wouldn't ruin the meal! But glad I stuck with it ;) And yes I definitely care about fat and calories but I go on kicks (like lately) where I have been not doing so good, and don't really care ;) It's all in good food!

    Me, too (about the kicks where you don't care) - but with winter coming on here with less activity, I need to be more vigilant. I don't have a weight problem, but I don't want one, either!

    OK, now you'll probably laugh. My solution to the hole was swap hands. I wear the right glove on the left hand putting the hole on top. Not the best, but I just cant bring myself to get a real pot holder. Defiance?

    Not at all. I stopped by a store on my way home today that has a large selection of specialty spices. Still no luck. My last chance before internet purchase will be Walmart. I have hit all the grocery stores in 2 towns. Here in Smallsville things can be hard to get :(

    Mr. P - if you live in Smallsville, then I live in Tinytown. In fact, they've rolled up the sidewalks for the nite - no CA time here - so it's lights out for me too. Another work week looms...

But I can't believe that you didn't have it all figured out! :) The seasoning in question is Sazon Goya. The holey glove is Mr. P's welding glove that has a hole so now is used as a potholder. He made the comment once that he had learned not to fry bacon without wearing a shirt, so I graciously suggested that he wear his welding hood to offer some additional protection. Hence the photo offer. Now 100% clear as mud for you??? :D

    ML2C, I cant really explain why I don't like sweet potatoes. The flavor of them does not taste bad. (like say.......LIVER........................ACK, ACK ) I think its more along the line it doesn't taste like a potato. Does that make sense? Its like someone removed the POTATO taste. They're not POTATO-EE...............Kinda like when one soaks fish in milk to remove the FISH taste so its not FISHY : )

    I had spinach I had to use up and another monster sweet potato, and this was the perfect solution. Made this for a late breakfast. I misread the directions, however, and used 5 cups of spinach instead of 5 oz (I posted a pic on the recipe page that is just a little green.) I also had NO luck with the nesting egg thing. My first one fell apart, so I cooked the egg separately for the second one and placed it on top. Both tasted great. With the onions and spinach, I didnt taste much sweet at all. This was really ggod. Thanks for the heads up, GK and a great recipe Christinem

Although Im not sure how that will be. Im going to make a dipping sauce for them other than ketchup just in case they're too sweet
