Sweet Potato Cakes with Mango Chutney

    These are fantastic cakes!!! Cilantro was PERFECT in these! I keep my ginger peeled and in the freezer and I just grated it into the bowl. I admit I did not make my own chutney just bought some. These brown up very nicely and stay together beautifully! So easy!

    I know that curry and garam masala are different, but I think I'd like to give this a try using curry powder. I also keep ginger in the freezer and then grate it into the recipe - seems that it keeps some of those fibrous strings out!

    Hey GK! Yea that picture was taken last week at Briauna's class Christmas party. I couldn't get Caiden to smile, but it's still cute ;)

    I think curry would work as a good sub out. I love the ginger in the freezer trick! I hate peeling that stuff every time I need it and find it hard to chop. Peeling it all at once and getting that tedious task out of the way makes my life just a little easier :)

    Finally got around to making these after I opened a jar of apple/tomato chutney. Tomato Apple Chutney. Doubled the recipe. Made 16 cakes using a 1/4c measure. First couple of cakes came out too dark. Lowered the flame to medium and cooked for 1 minute to get a nice golden color.
    Served up with some linguine in marinara sauce.
    The cilantro amount could be lowered for those whom don't like cilantro so much. I found it just fine. Mother was as happy as could be over the cakes. But really, anything with sweet potato or pasta is in her wheelhouse.
