Sweet Potato Gratin

Recipe by Skpickard: Sweet Potato Gratin/saved
A nice sweet potato gratin. It is quite soupy. Maybe only a half cup milk would do. Came done in proper time. Good flavor. It is more of a savory than sweet dish. So the application of some salt is warranted.
Recipe is skimpy on onion and cheese.
I used a smoked Gruyere I had left over from another dish.
Also recipe didn't say what type of meat to use. But since the topping was pig, I added layers of lunch meat sliced ham that I diced up and used some of it for the topping. A whole 2 lbs went in the dish.
Sliced ingredients up with my new 15 degree chefs knife. It was a pleasure not struggling with it. Bought the one recommended by ATK.

I love sweet potatoes, but never know what to do with them other than cook and mash. This looks like a good option, although I'd omit the meat. I often agree with ATK on equipment recommendations, and very seldom have not been happy with a purchase I made based on them. My knives are Wusthof. Is that what they recommend? I bought all new ones by buying open stock and getting just the knives I know I'll use all the time instead of buying a complete set and getting pieces I know I'll never use.

I have never seen meat in a sweet potato casserole. I would totally go for the bacon in this one! Looks like a good meal, did you add any salt?

    Only after it was plated.

Smoked Gruyere must have been fabulous with the sweet potatoes!

This looks interesting. Nice that you can add the meat or not.
Yes, I want to know what knives ATK recommended, too. My chef knife is a Forschner and I have a mix of others. One Wusthof paring knife.
