Sweet Potato Patties by Midgelet

    I made Midgelet's
    Garam Masala Sweet Potato Patties
    last night. I only used two sweet potatoes as it was being served as a side dish for three people. That being said, I did add the entire egg, and at least a cup of panko, and I doubled the Garam Masala as we LOVE that spice mix.
    I had never cooked with Coconut Oil before and it took me a few tries before I was successful finding it. (Ended up getting it in a Health Food Store). And I learned something about Coconut Oil that I never knew before. A refined coconut oil is quite a bit cheaper in price but is usually tasteless and odourless. An unrefined coconut oil is generally labelled as "Virgin" or "Extra-virgin" and has a heavenly sweet coconut aroma and taste and that's what Midgelet calls for in her recipe with good reason. :) I want to go look for more recipes that call for coconut oil as it is really lovely!
    We served our patties with a Mango Chutney and everyone gave the recipe a total thumbs up. My son said that he would like to see if we could 'crisp' them up a bit more the next time, so I think I'll make a very thin patty for our second attempt.

    Those are really pretty, Chuckieb. Do you have to use coconut oil? I am assuming it has some flavor to it other than vegetable or olive oil. Maybe a coconut flavor? :)

    No Frankieanne, I wouldn't think you'd HAVE to use coconut oil, but.....it does add that certain something extra. Indeed the virgin coconut oil has a slight, mild, coconut flavour that does impart to the patties. It's a cool oil, like lard in the jar but more transparent.
