Sweet Spicy Giardiniera

    I had to make a few minor changes to what I had on hand. I only used half a red pepper and used a green pepper in place of the yellow. Also, no habaneros, so I thinly sliced up 2 jalapenos, seeds and all. That's it! I tried this yesterday after a good 3 days (I think?) in the fridge and it was DELICIOUS! It almost had a slightly floral, but definitely sweet and spiciness to it. I don't know if this sounds crazy but I am making tamales tomorrow night and would like to put this on top of them...think it would be good, instead of salsa! The recipe filled 4 regular size mason jars to the tip top :) I imagine this is good over hot (or cold) rice too :) Thanks Tina!

    So happy you tried it. I think Nadia from Bitchin Kitchen just killed this recipe. I always try to keep a jar on hand. I like that it isn't cured in oil like the jars at the deli. It is great as a relish on sandwiches. I put it in a hummus spinach wrap as a veggie lunch dish. I think the idea of putting it over rice would be great. I like cold rice salads. Or can you imagine it in a couscous or mixed into a pasta salad even. Oh, the ideas you have just give me........yep, I see some yummy lunches in my future...Thanks for the review and the idea leap!!
