    Tangled Thai Salad

    My review "This salad is FANTASTIC!! Loved everything about it ... how it looked, how it tasted ... I couldn't find yellow beets so I used red. It's fresh and vibrant and a nice change from the standard tossed. The dressing is awesome and even though it's "Thai" IMO this salad would still go with any summer grilled entrée. Thanks for posting and sharing the recipe!!

    No Jicama. Couldn't find it which I thought odd because the store I shop at usually has it but it was a holiday weekend and the first time I went I couldn't even get the Napa Cabbage. On the return trip the shelves were restocked ... maybe they moved the Jicama from it's usual spot but I did look all over. :(

    That is a very pretty salad. I've had yellow beets before and I loved them. Never would have thought of peanut butter with lime though!

    I've only had Thai food one time and what I had (in a restaurant) did not blow me away and I've never tried it since. I had no idea that peanut and lime are often used together!

    Thai food is extremely spicy. I've only ever had Pad Thai, and had to leave out the super spicy stuff, so it wasn't exactly the way it was meant to be served. This looks very similar to what I remember.

    One of the reasons I got a spiralizer was just to make this beautiful salad. I wasn’t sure about the beets. I’ve never tried or even seen raw beets on a salad bar, so I cooked mine. I’m still trying to get used to Thai food. The dressing had a wonderfully unique flavor. I could handle the spicy hot, but it was a little overpowering for me after a couple of bites. Hubby, however, really enjoyed it and kept saying how the dressing would be good tossed with Asian noodles. I might do that with the leftover dressing. Thanks for sharing Chuckieb!
