Tangled Thai Salad

- 1 cup Napa cabbage, chopped shopping list
- 2/3 cup spiralized carrot shopping list
- 2/3 cup spiralized beet (yellow or red) shopping list
- 1/2 cup thinly sliced cucumbers shopping list
- 2 tbsp. chopped peanuts shopping list
- 3 tbsp. chopped cilantro shopping list
- Peanut Lime Dressing: (Makes one cup) shopping list
- 3 cloves garlic minced shopping list
- 2 tbsp. tightly packed cilantro shopping list
- 2 tbsp. peanut butter shopping list
- 3 tbsp. lime juice shopping list
- 2 tbsp. tamari (soy sauce) shopping list
- 1 tbsp. rice vinegar shopping list
- 1 tbsp. minced ginger shopping list
- 2 tsp. coconut milk ( I use a small can and the rest keeps in the fridge for up to 6 weeks) shopping list
- 1 1/2 tsp. sugar shopping list
- 3/4 tsp. sesame oil shopping list
- 3/4 tsp. sambal oelek (sub with sriracha if you wish) shopping list
- 1/2 cup sunflower or vegetable oil shopping list
How to make it
- Put Napa cabbage in a large serving bowl and top with spiralized carrot and beet. Decorate with cucumber slices and sprinkle with chopped peanuts and cilantro.
- For the dressing: In a blender, puree all ingredients except the sunflower oil.
- With blender running, add sunflower oil in a thin stream until dressing is emulsified.
- Drizzle the salad with the dressing or serve the dressing on the side.
