Tennessee-style Slow Cooker Chipotle Bbq

Recipe by NCcook22: Tennessee Style Slow Cooker Chipotle Bbq/saved
Pulled some pork today. Then had a sandwich. Used Chefjeb's Hamburger Buns
Buns were great as usual. Pork was done at 10 hours only because I used a 10lb roast. It was done at 8 hours because that's when I pulled the bone from the roast. Left it in for those 2 additional hours to make the buns.
Pork was flavorful a little sweet and smokey. Used Sweet Baby Ray's Honey Chipotle Bbq sauce. I think I prefer a little more tang in the sauce. Will use my own Bbq sauce next time but there's nothing wrong with this sauce.
After the 10 minute boil time for the juice, I added 2 tbsp cornstarch paste to thicken it up just a little.
Going back for seconds in just a second.

Geez, that looks so good, pso! What did you use for the dark beer ingredient? I thought you were out of beer. :)

    Shhhhhh!.............I was out.
Was able to finagle a bottle of black and tan. Used the 3 ounces then tried to drink some. Had to pour the rest out and hide the bottle in the trash. Guess I've lost my taste buds for drinking beer.
But 3 ounces in a roast this size? I can't see it making much of a taste difference.

It was my new 6 1/2 quart crock that I made apple butter in this past season. Pork butts came on sale while I was defrosting mine. Half the price I bought mine for. So I bought another one. Learned how to debone it in cyber space. Going to yank the bone out of this new roast and use it for a pot of beans. And a lot of the pork roast recipes here at GR are 5 lbs or less. I'll divide this new butt up so it will fit in gallon freezer bags. Then maybe I can use the smaller crock.
