Thai Chicken with Basil Stir Fry

    Recipe: Thai Chicken With Basil Stir Fry

    This is one of the most impressive and elegant combination of flavors. It’s slightly sweet, has some spice and if you like basil, this one’s for you! So simple and easy, yet tastes like you spent hours in the kitchen preparing a gourmet meal. Hubby and I are not fond of Thai food, but I keep saying it’s because we haven’t tried the right dish. We tried the right dish!

    Did I make changes, you ask? Of course! Used oyster sauce instead of fish sauce. I thought I had some, but turns out I didn’t and did not want to run to the store a 3rd time! I also cut the red pepper in half due to my over sensitivity to spicy hot food. It was perfect for me, but hubby said it needed more. I’ll try upping just a little next time. I also reduced the amount of basil to just a cup or maybe even slightly less. That’s a lot of basil and I didn’t have that much to start with. Again, I found it to be perfect, but it wouldn’t hurt to use more if you have it. My motto is that you can always add more if needed, but you can’t take it away if you add too much. Next time, however, I will double the amount of mushrooms. Love, love, loved the shiitake mushrooms!

    It looks a little dry in the photo, but most of the sauce soaked into the rice. It’s actually a rich, creamy sauce and a little bit goes a long way. Definitely a keeper and I would not hesitate to make it for dinner guests.

    I've been turned off coconut milk recipes lately after trying a few not so good ones. Though I should probably blame that on the brand of canned coconut milk I used. Do you remember which brand you used? Some are sweeter, some are thick, some are light, lol, so many to choose from and it sounds like you picked a good one!

    Thank you, Cosmicmother! The brand was Goya. I've never used coconut milk before so I wouldn't know the difference between good and bad. The dish was on the sweeter side which is fine with me because it offsets the spiciness.

    This looks like something we would love! The ingredient list sounds wonderful. It's a good call to use a little less of something and then add it later if needed. Shona we like the brand "Thai Kitchen" coconut milk. It has no funky ingredients in it :)

    I love basil but I do have to admit I have not cooked with a couple of these ingredients as the Thai food I have had, I did not enjoy. Its nice to know that you subbed oyster sauce for fish sauce. I've bought oyster sauce before and it drives me nuts to have an opened bottle of an ingredient and then not know what to do with it. I'll have to remember that substitution. Your picture is gorgeous! I see another poster said it was dry though.

    Thank you, Everyone! Frankieanne, I saw the comment about it being dry. I almost doubled the sauce, but didn't have enough basil. It's a pretty thick, creamy sauce and wasn't dry at all. Maybe if the chicken was overcooked or something, it might come off as dry. Like you, I haven't had good luck with Thai food, but this was really good.

    I suppose I should try some more Thai food, DIZ. Maybe I'll ease into it some way, somehow. See if my opinion changes.

    I adore Thai food. Bookmarked this to try after your recommendation DIZ. I always use 'light' coconut milk and haven't really noticed a difference in taste from brand to brand. I think "Thai Kitchen" like Michelle used is the type I get normally in our grocery store.
