    Tuna Casserole With A Twist

    I wanted to try something different from my usual tuna casserole and Joce had mentioned this in ODD a while back..We loved it! Easy to make, inexpensive... a great meal in a hurry. The chow mein noodles on top of the casserole stayed nice & crunchy, added some texture:) I used cream of celery soup and didn't add the cashews (I didn't have any)..I did have to bake for about 35 minutes to heat through..thanks Joce for sharing your Mom's tuna casserole! I'll be making this again!!!

    Absolutely sub cream of mushroom! That's what I usually use in tuna casserole:) Ramen noodles should work as well!

Do you really think the ramen will work though? Are you just going to break them up and sprinkle them on without cooking them Mr. P? I have wanted to make that Cream of soup by Keni forever.

    Janet, I think the ramen would work, the chow mein in the casserole did soften up a bit, but the the top stayed crunchy..I'm thinking the same if you used the ramen..I could be wrong though, sure wouldn't be the first time...I'm sure if Mr. P gets a chance to make this using ramen noodles, he will let us know!

    ML2C, Yes I make Keni' soups in place of canned all the time and it is so much better.

    Mr. P I have used cream of mushroom and cream of chicken as well in this and I think ramen noodles would do the trick in this. I had never thought of that before it is actually a cool idea!

    Frankie, I haven't tried it with potato chips yet but I might have to sometime as we can't get the canned Chow Mein noodles here anymore for some reason? I have done it with the packaged ones since we haven't been able to get the canned ones and it is O.K. but not as good as the canned ones at all! Marie has kindly offered to send them to me and I just might take her up on her offer:)

    Ha! I just solved my problem about finding the noodles! I stopped by my local Chinese
    restaurant and bought some of their fried noodles. I must say they were awesome in this and they only cost a dollar! Can you tell I am delighted? RIGHT ON!
