    I eat pretty light during the week - saving my major calories for the weekend. So, I eat a lot of salads for dinner and I'm getting kinda tired of greens so I am branching out into other main dish salads. I tried this tonight and I really loved it. Plus, I have leftovers for lunch tomorrow. A bit more detail on the recipe.

    Thank you, ladies. I had a little bit more later on and the vinegar taste seems to have disappeared. Maybe my onions overpowered it. Still - I don't think 2 teaspoons would hurt.

    Frankie, your picture looks delicious! I bought canned tuna for years until I read that it contains mercury - yikes! Now I buy canned, skinless, boneless salmon and mix it up just like tuna salad. The flavor is so mild that it tastes like tuna salad, too. I bet it would work in this salad. If you want to try it, it's made by Chicken of the Sea, has a pale pinkish/salmony colored label and is there with the canned tuna. You may have to look, though, as, in our store at least, they don't stock a lot of it and it doesn't jump out at you like the tuna does.
