Twice-Baked Buttermilk Potatoes

    I have a huge bag of potatoes to use up. I found this and decided to make it for lunch! My potatoes are not large. I used one medium sized and one pretty small one.and pretty much cut the recipe into 1/3. Didn't have the white cheddar so I used yellow. I loved these! I didn't add any salt because I am watching my cholesterol, and the cheese made it a little salty anyway :) Liked the touch of parmesan. Thanks Dahlia!!
