Tyler's Ultimate Flank Steak Fajitas and Guacamole

    SO GOOD! The marinade is awesome, the chipotle flavor really comes through. I halved the marinade since my flank steak was just a little over 1 lb. Just enough for Michael and I (kids are out of town). I had planned on cooking all this in my cast iron grill pan on the stove since it's about 200 degrees outside, but go figure, right when I go to light my stove it won't light. Gas is out! Go to find out the whole cities gas went out. The poor workers have to go house to house with their little key to turn it back on for everyone. Anyway, so I ended up cooking everything on the grill. Turned out good though, glad it worked out that way. Oh served them as lettuce wraps, not tortillas :)

    Flank steak! Last time I saw flank steak it was around $89 a pound. ha I don't know what it was per pound but I know it was expensive. Back in the early 80's (I'm aging myself here) it was the "cheap" cut and I used to buy it all the time.
    This looks fabulous. I love fajitas and this one looks really great - because it has a lot of ingredients! :-) I love those marinade ingredients. They look like they would work good for shrimp, too. Gorgeous picture, Michelle.

    Lol, I know, that's why I haven't bought flank steak in so long, it's always SO expensive! I caught it on sale though :) I think the marinade would be great on shrimp, shrimp and chipotle go perfect together!

    Medium-High is not hot enough to cook flank steak without leaving it chewy.
    1) This steak needs all the heat your stove or grill can muster to flash sear the meat to a medium rare state. Rest, then thinly cut against the grain on a bias.
    2) Or low and slow.
    Anything in-between and one needs good choppers and a healthy jawbone.
    This should be one of the cheapest cuts of meat.

    Not here, pso. Back in my day when it was so cheap, no one even knew what a fajita was. I think that has helped up the price. When something becomes popular, they can jack up the price.

    I have no clue what temperature my grill was, it's charcoal, but I DO know it was pretty dang hot and the flank steak was very tender :) I remember even back when I first got interested in cooking (about 10 years ago) flank steak was cheap...not sure what happened to make it so expensive, but it's annoying!
