Whipped Cream Biscuits

    Recipe by Henrie: Whipped Cream Biscuits/saved
    A good biscuit. Good rise @ 1" over dough height. Moist and tender with nice flavor.
    Made 14 biscuits. This is the stiffest biscuit dough I have ever worked with. Was afraid the result would be dry and crumbly but it was not. Don't think you could hurt this recipe by adding just a little more cream to make the dough more workable. Used AP flour with the right proportion of rising agent to make it the same as self-rising flour.
    Baked up nicely in 15 minutes.

    Roll or pat out the dough, however your mouth's set, to 1/2". Clean the top of the dough of any excess flour. Fold the dough back on itself one time and roll or pat the dough back out to a half inch. That's it! It creates enough of a bond in the dough to hold the biscuit together but let it split in the middle when it rises. You'll know when/if you leave too much flour in the crease. It will act like a biscuit stacked on a biscuit.

    I had some extra whipped cream I had to use up before the due date was up and decided to make these biscuits on Points recommendation. I made my own self rising flour as well for these. The dough is quite thick and I did not fold the dough over like Points suggested and they did do quite a nice rise for me. I did have to cook them for 5 minutes longer to brown them but that is not a big thing for me. These biscuits freeze very well and when I want one with soup for lunch. They warm up in the micro in no time at all. I will be making these again when I have some extra whipped cream on hand.
