    White Chocolate Chip Pumpkin Muffins

    I love versatile recipes, and this is sure it!
    The kids love these and devour them eagerly!
    My son came home with this recipe from a Foods class 3 yrs ago. The only difference; that recipe used semi-sweet chocolate chips, which is what I always use. Though I am sure the white chocolate would be great too! I also like to add a tsp of vanilla to the recipe. I have dark coated non stick pans, I find they burn at 400 degrees so I bake them at 375 for 22-25 minutes.
    Now, try this substitution!: instead of 1/4 cup of water use orange juice, and dried cranberries instead of chocolate chips (a little orange zest too if you have it). Absolutely my favorite combo! The kids love the chocolate chips so I usually make a batch of each when I have leftover canned pumpkin.

    They look fantastic! I bookmarked this immediately when you mentioned it the other day. I would use chocolate chips in this as well and thanks for the other substitution suggestion. I will give that a whirl also:)

    Glad to hear your kiddos love these. We aren't huge white chocolate fans here, so love that they switch out well with the semi sweet chocolate chips. Great picture!!

    I also find white chocolate a little too sweet. I think you need some tartness to balance out the sweetness of it, hmmm, the orange juice and zest with the white chocolate chips could be a swell combo too, lol. :)
