    Whole Wheat Banana Pancakes by icecreammuffin

    I made these for lunch today since both kids were home, and I had a couple bananas to use up! I added a few chocolate chips to them, just to make sure the kids tried them at least, lol. So I left out the 2tsp's of sugar and served with maple syrup. I also used Cashew milk instead of Almond milk. Not sure if that matters all too much, the cashew milk is a little thicker though.
    They are very flavorful and filling. The texture is a little soft from the banana, so they aren't super light and fluffy like regular pancakes. But they're still good! :)
    I used my electric griddle pan, and just ran a bit of coconut oil over the surface between batches. So I didn't use a whole 1/4 cup of oil. I also got about 15 pancakes by using a 1/4 cup measure for each pancake.
    One kid loved them, and said they were the best pancakes ever! The other one didn't like the texture as much but still ate them.
    I'd like to make them again with rolled oats, I think they would soak up some more of the moisture and give them a nice chew.
