Recipe by Chefmeow: Yukon Gold Potato Soup With Creme Fraiche/saved
A very flavorful soup. Made homemade Creme Fraiche and cut a handful of chives from the garden.
    Doubled the recipe without trouble.
Used red potatoes. It's what I had and they are very comparable to golds.

This looks great! Just how I make potato soup as well, with no milk or heavy cream. Just a bit of sour cream for garnish. Love the garden chives too! :)

Creme fraiche is such an easy thing to make but it does require a 24 hour head start. A half cup heavy cream with a half tablespoon buttermilk stirred in and set out at just above room temp for 24 hours. Then chill. Don't let me catch you eating it right out of the spoonful.

That does sound really easy Points! But then what would I do with the rest of the buttermilk? Lol!

That looks good, pso! I don't like milk or cream in my soups either. Nice, too, that the creme fraiche is a garnish in case one didn't have any. Did you taste it without the creme fraiche? Does the soup really need it?

It really gives the soup a boost in flavor.
