Zucchini Pancake

    Korean Hobak Jeon Zucchini Pancake
    last night.
    I followed the instructions to the T, but my pancakes were a lot thicker than the ones in their picture. The next time I try this, and there will be a next time as it was a neat idea and the flavour is nice, I will make perhaps four thinner pancakes. The recipe said it was for 2 people and made 2 pancakes so I just used half the batter on each.
    I was tickled to actually find the Korean pancake mix at a Korean Grocery store downtown which I'd never been to before so that was a fun discovery. The recipe says that if you can't find the Korean pancake mix, to just substitute it with flour, but I would think that you could just substitute it with regular pancake mix? I grated both the zucchini and the carrots in my food processor as I was too lazy to do any 'julienning'. :)
    My son liked the dipping sauce and the dipping pancake concept. Always fun to try out something new! :)
    I didn't rate it yet as I'd like to go back and do it one more time first to see if I can get it looking more like it's supposed to.

So far any site I have been to says there is nothing to really compared to the actual mix but this is about as close as I could find from a blog.
    Makes 1 big pancake

    1.2 cup all purpose flour
    1/2 cup rice flour
    1 egg, lightly beaten
    3/4 cups cold unflavored seltzer water
    1/2 tablespoon canola oil, plus extra for the pan

Well, this is the first I have heard of it. :) I'll have to see if I can find something like that here. Thanks for putting this here. I just love that picture.

    Joce, I bet my life you can buy Korean Pancake Mix at Foodsmith's. :) ML2C and I were chatting about this same substitute question yesterday and I'd told her that my pkg. of Korean pancake mix has the following ingredients:
    Wheat flour,tapioca starch, Glutinous rice powder, soybean oil, cornstarch, sugar, milk powder, baking powder, roasted bean flavour? and yeast.
    I'm still maintaining mine is about twice as thick as theirs Frankieanne. And even the cooking time...I had to leave mine on longer as it was still mucky in the middle after the 13 min. mark. Either way, I am going to try the recipe again and just see how I like it when there's less batter per pancake.

    Chuckie, your picture must be deceiving because I agree with Frankie, it looks just as thin as the recipes picture!!! Pretty too! I'm so excited about making this one soon and I am just going to use some bisquick pancake mix if I can't find the Korean stuff in my store. I was going to actually make this recipe a couple days ago but found my zucchini had gone bad :(

Mine turned out pretty thick compared to the photo, but I just don't think I spread the batter out enough, but good anyway. I doubled up on the sugar in the dipping sauce just for personal preference. These have a great texture and cook up nicely! Added my photo.
