I bought some olive oil last summer for a specific recipe and have continued using it since. All this time I thought it was just some tasteless substitute for "real" oil, and in fact it's just the other way around! Oh, olive oil makes everything so much better. I've been trying to sell my sister on it, but her main problem is that it's definitely more expensive, and she uses a lot more than I do. I'll just keep giving her part of what I cook!

I just looked to see if I had any recipes posted that call specifically for olive oil, but nope. I use it in most of them, though, for sauteeing especially. Olive oil with butter makes the absolute best fried chicken, a tip I got from one of the James Beard books. My husband was majorly impressed, considering I hadn't fried any in, oh, probably, seven years, and it used to be terrible. But I've learned!

In some Italian restaurants, it's customary for them to pour some olive oil on a small plate and dip the bread in it. Also have friends who like to drizzle olive oil on pizza after it's baked. Whenever I make a fritatta, I use a little olive oil and butter together to saute the veggies and then add the eggs to it. Gives it a wonderful flavor.

The main thing about cooking with olive oil, cutting back on salt, sweets, meat, etc., is now we tend to not like other people's cooking. And we get sick if we eat out, especially at a fast food place (except McDonald's, surprisingly). But I don't want anyone thinking we're "health nuts" because we certainly aren't. We've just gotten better at recognizing good food when we eat it.

Okay, soapbox gone-gone, it's safe to come out!

Not so recent a fan here

I make the herb combination at that our favorite Italian restaurant uses at home, put a pinch on the plate, add the oil and then dip the warm bread into it........amazing!

We liked the flavor of that restaurant's oil so much that I actually sent away for it because it's not sold retail. I've already gone through a 5L jug.

I saute everything in butter and olive oil, not only for the flavor but because the olive oil has a higher smoking point and keeps the butter from burning. It's a wonderful thing!

I have been making herb infused olive oil for ages, I can not get enough of it.
With the exception of cake recipes it is the oil of choice for all of my cooking.
Like Pat I combine olive oil with butter for my fish and vegetables.
Some of the simplest dressings start with olive oil.
One of my favorite pasta dishes is just olive oil , garlic and mabe a few grinds of black pepper.
