Monday Madness

    Soup and sandwiches for us tonight. Something super easy. Picked up some lunch meats from Sam's and those cute little diamond shaped rolls. I have some veggie soup in the deep freeze as a go-with. Sliced strawberries in orange juice as dessert. Have a great day ya'll.

    Hello out there. We'll be having leftovers tonight. Lots of pulled pork left and I have two beef rolls still so no one should go hungry.

    After birthday bash Saturday I turned into a complete vegetable on Sunday. Mr. SuchAFuss finally got me out of bed and took me for a beer and a burger.

    We are doing a pork roast in the slow cooker for pulled pork and some sort of salad - not sure what yet - maybe carrot and raisin as I have about 6 lbs. of carrots to use up.
    Everyone's easy meals sound great.

    No clue on dinner, maybe chili - it's that kind of day. Ran to Ross to see about a cheap replacement for the French White casserole I broke a couple months ago. Got one for $3.99 - not the same, but it'll do the trick. And of course ended up trying on a zillion clothes - bought a cute magenta-ish dress for $14.99. That's my splurge for the month!

    Wynne I have a rub I make with brown sugar, garlic powder, onion powder, lemon pepper, cayenne pepper, paprika, thyme and salt. Mix that together rub it on the roast, put it in the crockpot with a 1/2 cup water and leave it all day. Comes out super moist and falling off the bones if there are any (most of the time I use boneless roasts). I do the same thing with chuck roast. It's my easy dinner when I'm in a hurry. I always keep buns in the freezer so it's a meal on the run! chef2 posted a Moroccan Carrot Slaw recipe today - going to try that out.
    I think I'll leave dessert up to hubby!

    I ended up making stacked "super" smothered enchiladas: mixed some cooked rice, black beans, cut up cooked chicken breast, black olives, salsa, onions, jalapenos, enchilada sauce, put in alternating layers with cheese over corn tortillas and covered with a sour cream/El Pato mixture poured on top. HOT! Served with cilantro on top. Just finished and I'm stuffed! Was good though.

    Well, after round # 9748 with the teen I decided I was not in the mood for cooking so ordered pizza from somewhere I hadn't ordered from in a looooong time. Pizza Hut! I worked there way back when I was pregnant with said teen. Used to love their bbq pizza and I still do! Not so much their pan pizza though. Way too much crust for me, but I was splitting mine with K and C and they like a thick crust....we also had their garlic parmesan boneless wings. Omigosh! I could make a whole meal out of them and just might do that some night.
