    Good Morning!

    Hope everyone has a fantastic day. It's a bee-yoo-tiful day in East TN! Sunny, blue skies, and we have the windows up in the house! Not supposed to be too hot today!

    Lots of little errands and chores to do today. Then we are going to Marty and Robins house to grill burgers, their daughter and her new hubby are back from honeymoon and in town, so, we'll get to wee wedding pix and honeymoon pix. Think I'll take Guesstures (charades type game). It's been requeted for me to bring Robin's Favorite Spinach Dip (posted - and yes, named after her, she loves it so much I make it every time they come over). Probably take a jug of Ruby Relaxers. (posting both to group)

    Just got his RoyalTVness out of bed with a cup of coffee and a threat. He promised to work in the backyard. If you disable the remote control, he will do chores. Remember that hint....he won't get up and change a channel manually, but he will go pull weeds when the remote won't work~~ahhh, the inner convolutions of Fred's mind is mysterious and perplexing.

    I heard a certain someone is making biscuits and they sound so wonderful....I wonder if I could get a batch together for us.....(I ate my work breakfast 4 1/2 hours ago) Biscuits and sawmill gravy could be lunch for me and breakfast for the late rising gang. Have the urge for slowcooker apple butter. Apple butter is a great secret ingredient in barbecue sauce by the way....adds a nice mouth feel to a storebought sauce, with a splash of good ole Bourbon and a bit of mustard powder. Apple butter is good stirred into store bought pork and beans too.

    Have some chicken breasts bone in and skin on defrosting. Going to brine them a bit in salty apple juice with garlic and orange & lime peel. Will grill if I have gas in the tank, otherwise, I'll pat them dry and rub them with a "bodacious dry rub" and roast them in a hot oven. Grilled garlic potatoes (thanks for posting that recipe to the group) again, if the grill works, otherwise......oven roasted potatoes. Skinny green beans, stirfried with toasted almonds.

    Charlie Brown is getting his shots today after we track down the SPCA Van....it is hop-skipping across the county doing low-cost vet care. CB's paws are huge I swear he gets taller as we watch. His webbed feet are so funny. I have to remind the kid to wash between his toes. He loves his bath time......avocado dog shampoo for him........honestly. He tried dragging the newspaper in the plastic bag to the door today. It was so cute. We are working on fetch. Ollie can bring it to you but he won't release...maybe CB can teach an old dog a new trick, eh?

    The brine is 3 cups apple juice, 1/2 cup salt/1/4 cup sugar (brown or white) stirred until the sugar and salt is dissolved, with a hand full of crushed black peppercorns, 3 or 4 crushed garlic cloves and long strips of orange peel and lime peel. I let it sit in the brine 4 to 6 hours. Pat dry. Rub with a dry rub for me (no rub on Fred's chicken) and then grill or roast. The brine makes the chicken stay moist and the apple juice and citrus rind just helps flavor the bland breast meat. The hardest part is to remember to start with defrosted chicken and to keep the chicken submerged in the brine. I get my biggest food storage container (actually use my plastic cake carrier upside down) and dump all in it and then weight down the chicken parts with a big dinner plate on top with the a heavy meat mallet perched on top to try and keep it under the brine. It is a Rube Goldberg/McGuyver solution if you have ever seen one. LOL

    I'm making 5thsisters's 'Easy Shrimp in Creamy Basil Sauce'...I'm making it with chicken instead of shrimp. My 18 year old won't eat shrimp.

    Absolutely beautiful day here - on a roll lately. Don't know what's on the menu for tonight, but I DO know it will include "the whiner's" garlic bread! LOL Ahhh, just enjoying my last cup of coffee in my solitude...... (Brad ran to the co-op to get fertilizer) I know I have to do some kind of baking today too, he's out of chocolate coconut bars. ;O

    Had a foot injury a couple months ago and for some reason, I woke up this morning with it twice it's size and can barely walk on it...So supper is the furthest from my mind right now.....Thank goodness for Stouffers frozen cream chipped beef....ALways in the freezer for lunches but I think that's what's for supper tonight.

    Got a bunch of new cookbooks so just kicking back today and reading.....Have a great weekend all!!!!

    Have some chicken quarters thawed and think just a simple broiled chicken with bbq sauce. That always works when I'm feeling lazy.

    We have pretty cotton ball clouds swimming slowly toward the horizon. Just the perfect day for working in the yard. It's a shame I'm indoors again.

    I'll get busy on that Cherry Clafoutis in an hour or so. The eggs have to come to room temperature and I have to procure some heavy cream.

    So tired today. A friend came over and helped me clean out my overgrown garden. That woman is a machine! She also brought some patty pan squash (?) I think that's what she called them. Gonna throw one of those on the grill with some ribeyes...

    Went to the store for the big shop. Saved over $70 in grocery and store coupons! Yes!

    Lillian, after taking a second and third look at 5thsister's creamy basil recipe, I decided that's what we're having tonight, but with chicken also. Got 3 huge tomatoes left to get rid of and also my basil plant needs pruning! Perfect.

    I hear Brad out snipping something, he better not be pruning up one of my trees too much like he has a tendency to do!

    The brined bird on the bone was so much better than usual. I don't know if it is because of the brining or being left on the bone, it is just more flavorful. Fred liked his roasted plain and I liked the bodacious rub of Wynne's on mine. I have three breasts chilling and they will make great chicken salad tomorrow. Leftover potatoes will make a hash of some sort and the green beans will reappear in a vinegar dressing over some butter lettuce. Or they could morph with a can of tuna into a nicoise...ummm , I think I have the olives to do that.

    Wynne...hope the foot is better. Otter, take two aspirin and call us in the morning if you can't move from all the yard work. Pat, hope you had a great time at the party. Lillian, I like you suggestion on the rum and Points poor gums. Good job on the discounts Ang...wish I could do that well. JJM.....don't get back in the garden too soon, okay? NO relapses.

    Oh yeah, mom used to deep fry her patti pan squash and serve it with a horseradish sour cream sauce. Kind of like the zuchini sticks you see as bar food. She would slice the patti pans lengthwise and fry away. Good stuff.

    Gave my little Guinea Pig a very small sample since she was complaining about being full. I don't think she had swallowed the first taste before exclaiming "Hey, this is good".

    I'm going back in for a second helping but I had better leave some for tomorrow for her.
