No Time For Breakfast

    Hello, all! I'm new to this site and would love peoples' ideas and recipes for a quick and nutritious breakfast. I find protein in the morning really gets me going, but I have some problems tolerating eggs (although not in batters or dough) and pork products like bacon.

    Any ideas? It takes me a while to get hungry in the morning, so portable breakfasts are on the list!

    You could always have a breakfast burrito made with turkey sausage, cheese, and beans and just not add the eggs. :)

    Kid can't abide eggs either, so we often do a cheese stick,, piece of fruit and some crackers. Peanut butter sandwiches made the night before are a quick grab and go, with some juice. I pack them all in grab and go lunch bags, straight from the fridge.

    Remember it doesn't have to be a "traditional" breakfast food, as long as you break the fast with something to fuel the wonderful engine that is your body.

    I despise those prepackage "geared to kid expensive snacks" in the refrigerated section. I buy in bulk and repackage a variety of tastes in baggies. I save money and she has variety to choose from. Plus we can make healthier substitiutions. No candy bar, but I will include a single Hershey's kiss to say "I love you." It is my little signal to her, that I love her and to have a good day.

    I make waffles, pancakes and French toast ahead and send them home with my Grandchildren to freeze for the school week. They reheat in the toaster and fix it themselves,,,,the yougest is 1st grade.

    They put PBJ between slices of French toast to carry with them and whatever their preference on the waffles. The pancakes are easy to roll up with a filling too!

    I try to add some nutrition to these things by making Pumpkin waffle or buckwheat pancakes, etc.

    1 cup Sun-Maid Natural Raisins
    4 tablespoons orange juice divided
    2 teaspoons vanilla extract
    2 tablespoons sugar
    1 tub (12-oz.) softened light or fat free cream cheese
    2 cups chopped fresh berries and
    peaches *
    1/2 cup low-fat granola

    In microwave-safe bowl, COMBINE raisins, 1 tablespoon orange juice and vanilla.
    COVER and microwave on HIGH (100%) for 45 seconds; let stand one minute to plump raisins.
    REMOVE 1/4 cup raisins for garnish.
    ADD sugar and remaining 3 tablespoons of orange juice to raisins in bowl; stir to dissolve sugar.
    In medium bowl, WHISK cream cheese until smooth.
    STIR in raisin mixture and blend well. Remove 1/4 cup for garnish.
    LAYER in four tall wine or parfait glasses in the following order: raisin cream cheese mixture, chopped fruit, granola; repeat layers of cream cheese mixture and fruit.
    GARNISH with a dollop of cream cheese mixture and sprinkle with raisins.
    *Thawed, frozen fruits may be used.
    Makes 4 servings.
