Ingredients
  • 1 cup sugar
  • 2 T. cornstarch
  • 8 cups blueberries ( fresh or frozen)
  • 2 t. lemon juice
  • 2 t. lemon zest, divided.
  • 6 T. shortning
  • 2 cups flour
  • 2 T. sugar
  • 3 t. baking powder
  • 1 t. salt
  • 1 cup buttermilk

Directions
  1. Heat oven to 400. Mix blueberries, sugar , and cornstarch in large pan. Add lemon juice and half of the lemon zest. Stir constantly until mixture thickens and boils. Boil and stir 1 minuite. Pour into greased casserole.
  2. Mix dry ingredients. Cut in shortning until the size of peas. Stir in milk and the last half of the lemon zest.. Pour over the hot blueberry mixture. Bake 25 30 minutes or until topping is golden brown.
  3. Serve with honey whipped cream , ice cream, or even mascarpone cheese.
