Indian Shrimp Curry Recipe
INDIAN SHRIMP CURRY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hicks Estate in Jacksonville, Texas in 1987.

Ingredients
  • 2 medium white onions finely chopped
  • 4 cloves garlic finely chopped
  • 1" piece of ginger finely chopped
  • 2 tablespoons water
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander seed
  • 2 teaspoons salt
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon ground turmeric
  • Shrimp:
  • 4 tablespoons vegetable oil
  • 2" piece of cinnamon stick
  • 3 pounds medium shrimp cooked and deveined
  • Juice of 1 lime
  • 1 cup fish stock
  • 6 whole black peppercorns
  • Fresh cilantro leaves for garnish

Directions
  1. Combine all spice ingredients in an electric blender and process until a moist paste is formed. Heat oil in a large skillet over moderate heat and add spice mixture and cinnamon stick.
  2. Cook stirring frequently for 8 minutes then add shrimp and stir until they are coated.
  3. Add lime juice, stock and peppercorns then bring to a boil.
  4. Reduce heat and simmer covered for 15 minutes then remove lid and let sauce reduce 5 minutes.
  5. Remove and discard cinnamon stick before serving garnished with chopped cilantro.
