I saw Big Daddy make these this weekend and I wanted one...But I wanted one that I was gonna enjoy...So I took the concept and made them my own....Posting his recipe with notes on how I made it mine

Mmmm... Wynne, these sound good! I like your changes/adds too. I've never seen empanada dough, but I'm going to the store today. I attempted empanadas a couple weeks ago and they said use pie dough. Didn't really care for the heaviness - threw out the last one. Is empanada dough lighter? ;')

Great post... I will leave the curry powder out also... personal preference... and love the added cheese and salsa... will use pie crust because they don't have a Gluten free empanada dough yet... fove forks... nice photo of Big Daddy..

Ok......here is how I made it: I used ground turkey, and the spices listed in original recipe and cooked meat & spices as directed. I used pre-made pie crust, but didn't cut out individual hand pies-just rolled out 1 crust, slapped the meat mix on, brushed edge with curried eggwash-->(dosed it up with grated cheddar for the cheese-a-holics here) rolled out other crust and slapped it on top, cutting a couple of vent holes and sealing edges with a fork & baked as directed. Man, oh, man was this good! Gave some to a neighbor and her hubby and they flipped over it too.
I love curry but I think you are right about the thyme though-next time I am gonna try it your way. Here is another 5 forks!
