  • 1 tsp. dried thyme
  • 1 tsp. coarse ground black pepper
  • 1 tbls. salt
  • 1 jalapeno, finely diced
  • 1/2 cup bread crumbs
  • 1/2 cup beef broth
  • 1 beaten egg
  • 1 tsp. curry powder
  • 1 tbls. water
  • 2 packages pre made pie crust

Directions
  1. Preheat oven to 400
  2. Brown ground beef in large saute pan over medium heat
  3. Add onion, garlic, paprika, thyme, black pepper, and salt
  4. Stir together, and then add jalapeno
  5. Remove from heat, and add the bread crumbs and the beef broth
  6. Stir well to combine and set aside to cool completely.
  7. In a small bowl, whisk together the egg, curry powder and water. Set aside.
  8. On a work surface, flatten the pie crusts and cut out 3-inch rounds using a cookie cutter
  9. Add a hearty tablespoon of the beef mixture onto each round
  10. Fold over and press the edges with your fingers
  11. Crimp the edges with a fork
  12. Transfer the patties to a baking sheet and brush the tops with the egg mixture
  13. Bake in the preheated oven for 30 minutes
  14. Note:....The changes I made were
  15. 1. Didn't use pie crust, I used frozen empanada dough
  16. 2. Didn't use thyme
  17. 3 Added some salsa to the mix
  18. 4. Added cheddar cheese to the pie before sealing
  19. 5. Didn't use curry powder in the egg wash...Used Cayenne pepper

I like it! I love the way we can take the recipes and get inspiration. I am always changing something!

This does sound good.. I don't know if they have frozen empanada dough here.. seems like they would seeing where I live. Checking tomorrow.
Thanks..

Sounds delish! I like both of the recipes, need to try both versions, thanks!

Mmmm... Wynne, these sound good! I like your changes/adds too. I've never seen empanada dough, but I'm going to the store today. I attempted empanadas a couple weeks ago and they said use pie dough. Didn't really care for the heaviness - threw out the last one. Is empanada dough lighter? ;')

Great post... I will leave the curry powder out also... personal preference... and love the added cheese and salsa... will use pie crust because they don't have a Gluten free empanada dough yet... fove forks... nice photo of Big Daddy..

Delish!

Ok......here is how I made it: I used ground turkey, and the spices listed in original recipe and cooked meat & spices as directed. I used pre-made pie crust, but didn't cut out individual hand pies-just rolled out 1 crust, slapped the meat mix on, brushed edge with curried eggwash-->(dosed it up with grated cheddar for the cheese-a-holics here) rolled out other crust and slapped it on top, cutting a couple of vent holes and sealing edges with a fork & baked as directed. Man, oh, man was this good! Gave some to a neighbor and her hubby and they flipped over it too.
I love curry but I think you are right about the thyme though-next time I am gonna try it your way. Here is another 5 forks!

Sounds yummmmmmmy! Thanks for posting such a wonderful recipe.
